Cowboy Casserole

Here is a family favorite that features The Farmer's Seasoning. Here at Farm Garden Co. we are blessed with a yearly cow to fill our freezer. I developed this recipe to give our family a wholesome casserole that is now a family favorite. I love this recipe because it is so versatile and easy. I love that I can change up the casserole to whatever ingredients I may have on hand. I can make it more spicy, less spicy. I can add refried or black beans or leave them out, the possibilities are endless.  

This casserole easily serves our family of 9 with leftovers. This casserole also freezes really well and in my humble opinion I think the casserole actually tastes better the next day. 

Oven: 375 degrees                                                                             Time: 1 hour

Ingredients: 

1.5 lb hamburger 

1 yellow onion diced 

1 cup cooked white rice 

1 cup frozen corn 

2 cans  Rotel©  tomatoes or diced tomatoes with chilis. 

2 cups shredded cheddar jack cheese

8 ounce bag of frozen tater tots.  

The Farmer's Seasoning - season to taste

Directions: Preheat oven to 375 degrees.  Fry up the hamburger and onion and season to taste with Farm Garden Co. The Farmer's Seasoning. I personally do not drain the fat off after frying as that is my personal preference. Once the hamburger is cooked through, add the cooked rice, frozen corn and two cans of Rotel© to the hamburger mixture. Mix the ingredients together and then add 1 cup of shredded cheddar jack cheese to the mixture and mix in. Pour the casserole mixture into a 9x13 greased pan. Top the casserole with the rest of the shredded cheese, then top with tater tots. Bake in a 375 degree oven for 30-45 minutes until tater tots are nice and crispy. Serve with your favorite salad or vegetable.
